Dhal for Days

One pot. 20min. And you have got a dinner that will last the family 3 mealtimes.

You can serve with rice, quinoa, or naan - or a mix of all of them. Again this is a great dish for the whole family. We've been feeding it to our baby (now toddler) since 5 months old. You can vary the spices if there are some you love/don't, or you like things more/less spicy.

INGREDIENTS
  • 2 Onions Diced

  • 1/2 tsp Nigella Seeds

  • 1/2 tsp Cumin

  • 1/2 tsp Lemon Grass

  • 1 tsp Ginger

  • 1 tsp Garam Massala

  • 1/4 tsp Chilli

  • 3-4 Tbsp Tomato Paste

  • 4-6 Garlic Cloves (Crushed)

  • 1/4 Cup Desiccated Coconut

  • 1/4 Cup Sunflower Seeds

  • 3 Tomatos (Skinned & Chopped)

  • 4 Sweet Potatoes (peeled and diced)

  • 2 Cups of Lentils (washed)

  • 400ml Water

  • Salt to Taste

METHOD

1: Dice onions, add to hot oiled pan. Once softened, add all the spices.

2: Once the spices have been infused with the onion - not burnt add the coconut, sunflower seeds, tomato pure, tomatoes.

3: Once these have started to toast, and again - not burnt, add the sweet potato to get covered in spice. Once it begins to soften, add the lentils and the water and bring to the boil.

4: The lentils and potatoes will probably take 15-20min to cook. Then just salt to taste and its ready to go.

NOTES

1. The biggest tip I can give to this dish is 'DO NOT LET IT BURN'. Now that sounds really obvious but at the early stages it is really easy to burn the onion/spices/coconut. With some dishes it adds flavour, but with this recipe it will make it turn very bitter.

2. We serve this curry with rice and some green veg (or a saag aloo if Im feeling generous with my time) and it makes a very wholesome well rounded dinner. Protein, veg, carbs. Perfect.

3. You can also add almond butter or coconut milk if you want to add another dimension to it but it doesn't need it if you haven't got it.

WHY DO I WRITE ABOUT THIS...

I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion. I’ve felt the weight of wanting more from life but not having the energy or motivation to pursue it. I believe that feeling exhausted, overwhelmed and trapped shouldn't be normal.
