Indulgent Fudge Brownies

These brownies have earned their place as our ultimate household dessert (that and our crumble... but thats for another day!). They’re ridiculously simple to make—minimal effort, maximum reward. While the total time might look long, they’re the perfect quick win if you can start them early… or you don’t mind a late-night treat.

Rich, dark, and squidgy without the sugar overload—just pure, deep chocolate flavour. And here’s the best part: they’re wholesome enough that I can serve them to my kids without a second thought. A dessert that feels indulgent but fuels you.. that’s a win.

Honestly they really are that simple... one bowl mix!

INGREDIENTS
  • 3-4 Cooked Small Sweet Potatoes

  • 1/4 Cup Almond Butter

  • 1/4 Cup Melted Coconut Oil

  • 1/4 Cup Cacao

  • 1 Cup Desiccated Coconut

  • 1/4 tsp Salt (or to taste)

    OPTIONAL

  • 2 Tsp Pumpkin Seeds & Sunflower seeds

  • 1/2 Cup Raisins (or other dried fruit or nuts)

METHOD

1: Wash the sweet potatoes, and put them in the oven whole. Once cooked through they're ready to go.

2: Peel off the potato skins and mash into a large mixing bowl. Pour in the coconut oil and the almond butter until smooth.

3: Then mix in the dry ingredients - cacao, desiccated coconut, and the salt. Add raisins or other mixed fruit/nuts now if you're including.

4: Once all combined level out into oven proof dish and then top with seeds pressed down into batter.

5: Place in the preheated oven for 25-30min at 180°.

NOTES

Add raisins or other mixed dried fruit and nuts if you want extra flavours & textures to your brownies

We serve ours with coconut yogurt & banana... works beautifully.

WHY DO I WRITE ABOUT THIS...

I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion. I’ve felt the weight of wanting more from life but not having the energy or motivation to pursue it. I believe that feeling exhausted, overwhelmed and trapped shouldn't be normal.
