Lemon Coconut Slice

If you’re looking for a snack that feels like a treat but still does your body good, these lemon slices are it. Perfect for popping into lunchboxes, grabbing on busy mornings, or packing up for a day trip, they’ve got that lovely balance of sweet and zesty without tipping into sugar overload.

Think of them as the fresher, lighter cousin of flapjacks or shop-bought snack bars—less sugar, more fibre, and a good hit of protein from the nuts.

If you’re making them for kids who are more used to traditional sweet treats, you can easily tweak the flavour: add a few extra dates for more sweetness, or tone down the lemon a touch. Either way, they’re nourishing, satisfying, and a total win for the whole family.

INGREDIENTS
  • 150g Ground Almonds, or Ground Hazelnuts

  • 200g Desiccated Coconut

  • 100g Oats

  • 3 Lemons (Juice)

  • 5 Medjool Dates (pitted)

  • Salt to Taste

METHOD

1: Mix the ground nuts, desiccated coconut, oats and salt in the bowl.

2: Zest the two lemons then squeeze the juice. Add the lemon juice, a splash of water and the 3 dates to a blender. Blitz until smooth.

3: Combine the dry ingredients with the wet, then pat down into a glass bowl to make the bars. Alternatively you can roll up into balls (we just prefer the bars)

4: Then put into the fridge for 2hrs then slice up and serve.

NOTES

1. These are great alternatives to flapjacks or snack bars for kids. They have far less sugar, more fibre and also the protein from the nuts.

2. If you want to introduce them to your kids and know they are more used to the sweet treats then try using more dates or less lemon (or both).

WHY DO I WRITE ABOUT THIS...

I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion. I’ve felt the weight of wanting more from life but not having the energy or motivation to pursue it. I believe that feeling exhausted, overwhelmed and trapped shouldn't be normal.
