Ultimate Protein Crêpe

If you love a pancake but you’re also trying to nudge your protein intake up (and let’s be honest, a classic white-flour pancake is not going to get you there), then you’re going to adore my Protein Pancake Mix. I wanted something fluffy, delicious, and genuinely nourishing — but without sneaking in any protein powders. You know me… if it’s not whole-food and naturally sourced, it’s not going in the bowl.

So I started experimenting. Spelt for softness, chickpea flour for that beautiful protein lift, a handful of hemp hearts for buttery richness — and suddenly I had a batter that tasted amazing and packed a serious nutritional punch. Instead of the usual ~26 g of protein you’d get from a standard white-flour batch, this mix gives you around 41 g per batch… or if you swap the water for soy milk (highly recommend), you’re hitting roughly 55 g per batch.

For me, that works out at about 6.9 g of protein per pancake instead of 3.25 g, (THATS DOUBLE!) which feels like a huge win considering we’re doing it with simple, real ingredients — no powders, no extracts, just proper nourishing food. Fluffy, golden, high-protein pancakes that actually love you back.

And beyond the protein bump, chickpea flour and hemp bring a whole spectrum of benefits that plain white flour simply can’t — fuller amino-acid profiles, more fibre, healthier fats, and those slow-release nutrients that keep you energised rather than carb you out.

INGREDIENTS
  • 1 Cup Spelt Flour

  • 1 Cup Chickpea Flour

  • 3 tbsp Shelled Hemp Seeds

  • 2 Cup Water (or Soy Milk for extra Protein)

  • 1/4 tsp Salt (or to taste)

METHOD

1: Start by heating the pan.

2: Put all the ingredients in a blender and blend until creamy.

3: Pour the mix while tipping and rotating the pan to ensure the batter covers al the base (these are not American pancakes)

4: Once the pancake starts to lift at the sides flip to cook the other side, then serve.

NOTES

1. The key to a good pancake with a stainless steal pan is to ensure you use the Leidenfrost effect (when the pan is so hot water doesn't evaporate it just rolls around in a ball). This will stop them sticking without using lots of oil.

2. Have your pancakes with almond butter and you've added an extra 3.5g protein!

WHY DO I WRITE ABOUT THIS...

I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion.
