
Cream first or jam first I really don't care (I know which is right) I just want you guys to make these. They are so easy, they are so quick and they are a winner at any picnic as everyone can dress them up however they like.
We use spelt flour to try and move away from the over farmed/modified grains, plus other benefits: spelt is richer in protein, fibre, and minerals than modern wheat, supporting steady energy, heart health, and happy digestion. Its also Gentler on the body as Its unique gluten structure can be easier to digest for some (though it’s not safe for coeliacs). With more antioxidants and a more sustainable growing profile, spelt for us, is just a preferred grain.
Honestly it has taken me longer to write out this recipe than it does to start and then be able to eat these.

300g Spelt Flour
70g Coconut Oil
1/2 tsp Bicarb
150ml Water
1/4 tsp Salt
1/2 tbsp Apple Cider Vinegar
Raisins (...how many raisins are too much?)
1: Preheat the oven to 180c
2: Mix the flour, bicarb & oil in a blender to make a mixture that is like wet sand
3: Add this to a mixing bowl, then add the water, salt & vinegar and mix until it forms a dough. Add more flour if the mixture is too wet - and conversely, add more water if its too dry. Finally add the raisins.
4. Put the dough on a flour dusted surface, kneed out to 3-4cm thick (really doesn't need to be precise - just scone-ish height), then cut them out using a dough cutter. (we just use a jar that is the most perfect size for us)
5. Once all the scones are placed in a oiled glass tray put in the oven for 12min, then cool and prep them with toppings!
1. We use bicarb and vinegar because we don't use baking powder as we try and stay away from anything processed. Please use whatever you like working with.
2. Our topping of choice is Coconut yogurt & Raspberry jam (St. Dalfour Raspberry - this is made with no added sugar) as we like to avoid dairy and sugar where we can. But again find what works for you.
3. I will always advocate using glass cookware and never anything lined or coated. These have toxins in them and once heated you are eating the toxic residue. Again, always try and reduce your toxic load.

Tip: Keep in longer than 12min if you like them a bit firmer... or even crunchy.

WHY DO I WRITE ABOUT THIS...
I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion. I’ve felt the weight of wanting more from life but not having the energy or motivation to pursue it. I believe that feeling exhausted, overwhelmed and trapped shouldn't be normal.
