Ultimate Protein Pancake

I’m always on the lookout for ways to get more protein in — without touching protein powder. Super simple, quick and versatile.

We have these with avocado on top, open burgers, or even just a glide of almond butter on top. But the kids (and husbands) fave is banana and yogurt.

Savoury or sweet... success.

INGREDIENTS
  • 1/2 Cup Red Lentils (uncooked & washed)

  • 1/2 Cup Desiccated Coconut

  • 1/4 Cup Chickpea Flour

  • 1/4 tsp Salt (or to taste)

METHOD

1: It is as simple as putting all of the ingredients in a blender (I use a nutri-bullet) and then making super smooth.

2: Pour in the frying pan, they generally fit two, as they are more like the size of American pancakes. Put a pan lid on so that they stay moist.

3: Flip after a minuet or 2 and then serve with whatever topping you like.

NOTES

1. Ensure lentils are uncooked and washed. I wash through 5 times to make sure that they wont make the mixture gloopy.

2. Top tip for making pancakes (or anytime you use a stainless steel frying pan) make sure it is super hot and water doesn't steam off when poured on it actually makes little balls (Leidenfrost effect). This stops sticking.

WHY DO I WRITE ABOUT THIS...

I’ve lived through it. I understand how it feels to want a radical life change but not know where to start. Feeling trapped by exhaustion, self-doubt, and confusion. I’ve felt the weight of wanting more from life but not having the energy or motivation to pursue it. I believe that feeling exhausted, overwhelmed and trapped shouldn't be normal.
